Creole Chicken and Rice Casserole

Chicken and rice casserole recipe is a Creole chicken and rice casserole with green bell pepper, onion, celery, and tomatoes.

Ingredients

  • 2 cups cooked rice
  • 2 cups cooked diced chicken
  • 1 tablespoon butter
  • 1 medium onion, chopped
  • 1 green pepper
  • 1/2 cup chopped celery
  • 1 can (14.5 ounces) tomatoes
  • salt and pepper to taste

Preparation

1.Put cooked rice in a buttered 2 1/2-quart casserole.
2.Place chicken over the rice.
3.Heat butter in a skillet sauté onion, green pepper, and celery until tender.
4.Add tomatoes, salt and pepper; simmer for 10 minutes.
5.Pour sauce over chicken and rice.
6.Cover and bake at 350° for 20 to 25 minutes.
Serves 4 to 6.

Chicken Biryani

Chicken Biryani has been an all time favorite with us Indians.
Here is a microwave variant of the dish.

MIcrowave Chicken Biriyani

Ingredients
 
Rice    1 cup 
Water   1/4 cup 
Chicken  250 gms in small pieces 
Curd     100 Gms 
Garam masala   1 tablespoon 
Red color a pinch   dissolved in a teaspoon 
 
Method
  • Cook the chicken, 1 tablespoon of water, curd, garam masala and salt at medium mode for 10 minutes.
  • Add rice along with the required amount of water and cook on high for 16 minutes.
  • Cover it well.
  • Add the color on top and garnish with fried onions and serve hot.

Vegetable Hakka Chowmein

One of the most popular food items that are found today.


Ingredients
For boiling :
1 cup noodles,
4 cups water,
1 tsp oil,
1 tsp salt
For frying :
2 spring onions(shredded),
2 carrots (shredded),
5-6 beans (shredded),
2 capsicums,
2-3 dry red chilli (flaked),
1 cup cabbage (shredded),
5-6 baby corn (sliced),
5-6 garlic flakes (crushed),
2tsp oil,
2 tbsp tomato sauce,
1 tbsp vinegar,
1 pinch ajinomoto,
Salt, pepper to taste.

Procedure
1) In a big microwave safe bowl add water, oil and salt. Boil for 7-8 minutes at 100% power.
2) Add noodles and boil for 6-7 minutes at 100% power. Stir in between.
3) Strain the noodles and wash under running cold water so that the noodles do not stick to each other. Keep aside.
4) In another microwave safe bowl, add oil and all the shredded vegetables and microwave for 4-5 minutes at 100% power.
5) Add soya sauce, tomato chilly sauce, vinegar and ajinomoto. Stir it.
6) Add boil noodles to it and mix it. Microwave for 2minutes at 80% power.
7) Serve hot.

Variation
1) A non-veg variant of the vegetable chowmein can be made also. Small chicken cubes and small prawns can be used.
2) To make the chicken chowmein, take small pieces of the chicken in a microwave safe bowl and boil it at 100% power till the pieces tender. Add the chicken pieces along with the shredded vegetables in step #4 and proceed as per direction.
3) If you want to use prawn, then de-vein the prawn and wash thoroughly and before adding the vegetables in step 4 add the prawns and microwave for 304 minutes at 80% power and then add the vegetables as mentioned in step 4. Then proceed as directed.

Chocolate Brownie With Chocolate sauce

Here is the recipe for the Brownies.




 Ingredients:
  • 3 eggs
  • 1 cup oil
  • 1 cup sugar
  • 1 cup flour
  • 11/2 tsp baking powder
  • 1/4 cup cocoa powder
  • melted chocolate for topping
 Procedure
  1. Beat sugar, eggs and oil in a large bowl.
  2. In another bowl mix together the powders and add this mixture to the eggy one.
  3. Mix, till no big lumps are visible.
  4. Grease a big salad(glass) dish and pour the mixture into it.
  5. Put in the microwave for 7-8 minutes or until a fork inserted comes out clean.
  6. Take out and decorate with molten chocolate.




Chicken Reshmi Kebab

Ingredients

1.500gms Chicken
2.100gms curd.
3.2 tablepsoons of ginger+garlic paste
4.3 big green chillies.
5.1tbsp garam masala.
6.1 tsp of pepper.
7.2 Lime.
8.Few sprigs of coriander(for garnishing) 
9.2 tablespoons of molten butter.

Procedure

1.Wash and cut up the chicken into small cubes.
2.Mix all the ingredients other than lime and mix well.
3.Now squeeze the juice of a lime into the mixture and mix well.
4.Marinate for 4 to 5 hours.
5.Melt the butter in a microwaveable bowl for 30 seconds in microwave mode.
6.Preheat the microwave to 200 centigrade in convection mode.
7.Place the chicken pieces on grill rack and brush with butter.
8.Now place in into the oven and set the time to 18 minutes.
9.Take out every 5 minutes and brush with  butter.
10.Check out after 18 minutes,if chicken is still little uncooked then cook for another 2 minutes.
11. Take out and garnish with lemon juice and coriander leaves.
12.Serve hot with any favourite sauces.
